Here are two books... but I don't know that they offer what you are
looking for. There's actually a project in the works to write a book
like you want (with more of a remote sensing context) but there's
been a glitch with the publisher (I'm on the hook to write/edit a chapter...)

Web Cartopgraphy - Menno-Jan Kraak, Allan Brown
   I have not read this one...
