using openmap.property for menus

Hi,
I'm not sure to understand how to configure my viewer with openmap.property file
:
- is it possible for example to select or not a menu item :
ex : in file menu I don't want to display save as/ JPEG
       in Navigate/Projection I don't want some projections to be available
is it possible to do so without modifying code ?

is there somewhere a help about all available components and parameters
